Simple easy meals one person for health

For the health of myself and Earth and of animals, I try to minimise the use of utensils. Usually just one pot, one bowl.

Usually I boiled water in low to medium heat in a glass which can stand up to 300 °C.

Add a bit of good salt (Himalayan/ pink),

and in goes the pasta. Frusili, mostly.

Organic is better.

Other veg.

Potatoes from my pot plant.

Usually I prepare in an other bowl other seasoning, freshly crushed rainbow peppercorn, sesame oil, extra virgin olive oil, etc.

Sometimes I also pre-soak wakame seaweed. Sometimes, I have my pasta serve with salted seasoned dried seaweed sheets.

Plant-based.

There are so many international seasoning, spices, herbs, sauces to choose from international cuisines.

Try fusion, too.

Apart from Italian sauces or Italian mixed spices, try variations of :

Shichimi powder, siracha sauce, Japanese dashi, mirin, soy sauces, Chinese 5 spices....

Organic pasta.

Tricolor is nice for presentation, too.

Without egg, without milk.

Hence not egg noodle.

Since rice grows in water paddy and odten polluted with heavy metal and harmful pollutants, I rarely have any varieties of rice products(米粉rice noodle, 河粉...) except very occasionally organic rice.

This is Japanese soba with broccoli , wakame seaweed. Cooked with crystalized ginger. Served with shichimi powder, Kikoman soya sauce, sesame oil, extra vigin olive oil, spring onion.

This one with crinkle-cut butternut squash.

Gro Incredible Burger.
LindaMcCartney vegetarian meatballs.
Etc.
Nowadays so many plant-based choices from Waitrose, Sainsburys, Marks & Spencer, Co-op ...
Tips:
I eat a lot of fruits & nuts besides cooked food.
Minimising cooked food in Summer.
I varied and rotate my meals. Sometime just eat a good home made sandwich. I like M&S olive ciabatta rolls. Co-op olive bread and Sainsburys olive bread are also good.

There are many variations and favour of vegan cheese  slices ,
vegan cheese spread , etc.

Not to mention organic peanut butter, other nut butter.

My Vitamin B12 come from
 Marmite💋,
fortified non-dairy milk,
and supplements.

Food expo VegFest Brighton 2019 part 2

Continue, Food expo: VegFest Brighton 2019.
This part mainsly shows some stalls, cooking demo & kids area.

In order to  browse leisurely and take photos,
I arrived after the busiest lunch hours.

6 different protein shakes -- free to try.

There is a large kids area for interesting snack class
hosted by a guy dressed in dramatic costumes. Not in photo.

And a bicycle-powered blender for kids to make their own fruit smoothies/shakes.

(sorry for some blurry pics)

This stall's tasting containers in  little boat shape.
Curries.

Lots of choices of food.

Funny names: Fake & Kidme pie.   (vegan steak & kidney pie?)

For those who still loves the sensation of sinking their teeth in sausages...
vegan hotdogs. Drawing inspiration from 5 international cuisines

I didn't take much pictures for stalls which do fruit smoothies or fruit juices.
Quite a number of them. Naturally good.

Loving Hut express is there, too.
Also dishes from around the world.

Plant-based a.k.a. vegan  in Thai style.

Greek style.

one of the cooking demos.

There are various talks, too.
Stalls of clothings, make up, skin care, interesting accessories, etc.
The VegFest Brighton website have a list of exhibitors.

There are 2 or 3 gin bars, beer bar, wine stalls, too.

Got a free gift.
Each visitor can choose from 3:
a bottled drink including kombucha,
a jar of humus stuffed cherry-tomato,
a small bar of coffee chocolate.
All plant-based (a.k.a vegan).
I chose choc.

I also tasted 3 different types of Ferme the fermented cashew nut cheese.
 Cicioni is also nice.

Such expo are good -
tasting/trying, seeing new products, expo promotional prices.

I bought a jar of special mix turmeric drink powder to help me help reduce internal inflamation.
A flexible silicon cup cover.
A can of jack fruit.
A trial pack of fermented tea-leaves for use in salad. (Burma/Myanmar salad Lahpet Thoke)
Pack of 4 pick-n-mix small beers.

Since I have to travel a long journey,
I didn't buy those delicious plant-based nut-based cheese.

As the bag is already heavy, I have not bought herbs pot plant.

Thankful for a nice afternoon.

Food expo VegFest Brighton 2019 part 1

VegFest Brighton 2019. Over 200 stalls of different products predominantly food.
Tasting, shopping, talks,  cooking demo, etc.
Alcohol, clothing, skin care, make up, accessories, charities, cooking demonstrations, exhibitions...

Going to expo is nice experience. Shops from far away places gather in one place. Expo special promotional prices. Tasting. Even price draws. Talks and cooking demonstration...

I bought electronic ticket beforehand.
Arriving around late lunch time.
Food first.

Though I do fancy an ocassional pie, since there are many other choices upstairs,
I quickly walked passed stalls of pies.

Among various cuisines, I chose this
pulled jackfruit bun. Interesting contrast.
(I tried some others before)
From Manchester.

The container is  composable vegware.

Ha! KFS, not KFC.
Sei-tan is a plant based protein.

 Many choices in each stall.
All plant-based.
Inspirational ideas.

This one below is lovely. Free tasting of Thai curry jackfruit with rice.  Jackfruit in brine each can only GBP 1.
They also sell banana blossom, many sauces, coconut milk, coconut condensed milk, coconut evaporated milk, coconut cream...

This, free tasting lots of cake desserts.
All plant-based.

Busy tasting different plant-based, nut-based cheese products, forgotten to take photos. Ferme is nice. 3 flavours of cashews fermentino.

The exotic Berma/ Myanmar salad  Lahpet Thoke with fermented tea leaves is also nice. I had forgotten to take photo and these are from their postcard.

6 different protein shakes to try.
Cocoa, banana, blue berries, peanut butter, etc.

More stalls in part 2.
Exhibtion in part 3.

A quick visit to a plant-based themed small expo in Brighton vegan festival

Personally I had been to art & craft expo, design expo, motor industry expo, pharmaceutical expo.  Often expo-goers can see /experience/ taste things way before the mass see them in high syrret shops/ supermarkets.  Nice😄

Since I may not be travelling to London for the big one mext month, so, on Saturday I went briefly to the small one organised by Viva!

Hilton Metropole Brighton.

It has catering hall, talks and many different kinds of stalls in the large hall.
Not too big - a comfortable size.
I got some nice stuff.

I only managed to go there around 4 pm. Official entrance fee on the door is a fiver. But there were early birds tickets & other packages.

(No need to walk all the way from hotel main entrance.  Use the side entrance from Cannon Street  to the exhibition hall.)

To avoid missing things out, and to prevent impulse buying, I started with a quick walk through. Then I got a mixed fruit juice before revisited some stalls.

I could not buy everything I was interested in but good to see interesting things.

The guy at the artisan green tea and macha stall  gave me 2 magazines😄 which he got from other stalls.  So as a recipocate gesture, I bought a pair of wooden chopsticks from his stall. (I could not drink tea that quick after the juice)  That stall sells nice glass tea pots, ceramic tea cups, too. And macha protein balls.

In the 2 magazines,  and the official Viva magazine(not photoed), there are lots of recipes and useful informations.

I only bought a Spanish ceramic grating dish, and a natural hand-made shampoo soap bar.  Ha!

Another thing I surprisedyself is I only picked up a leaflet or two, plus, from the general area outside the hall a Great Taste Book 2017-18.

Many people have misconceptions about vegan "festivals" . They are basically another themed expositions (expo) , or  exhibitions ,  where products, services & talks , music, etc, took place.

👫Who are interested in such event?

Those who care about
🌳Health, youth, beauty, healing.
🌳Animals
🌳 Envirnoment
🌳 Spiritual & religious purity,
virtues & integrity
🌳 Catering / beverage

Diary-free egg-free versions
of chocolate, cakes & desserts...
Kind products...

And naturally , related  businesses showcase their products & services under one roof. Handy, isn't it?

The first time I tried plant based and raw vegan stuff was about 9 or 10 years ago from a particulat pioneering group far away from where I live. Not much choices in where I lived.

Isn't it that such "festival",  or expo , a nice way to see things outside high street shops and see beyond the limitations of average supermarket? 💡

😄Good to see more plant-based food, drinks, snacks, etc , are reaching different supermarkets & shops this year.

❤May all people live a healthy life with plant-based food.

Japan Centre London quick shopping

Since the coach will depart at 17:10/17:15, I had got to be quick.

There was a queue for the soft white bun with sweet red bean paste.
OK, I skipped that this time then.

I  went to the freezer/fridge to get natto.
There are products of 3 brandnames.
I chose the orangy coloured one.
The ingredients seem slightly better.

A pack of 4.

Then I quickly walked to the back and
grabbed a few items including

Shichi-mi tōgarashi powder.

An avocado sushi pack from the food court area.

I didn't even have time to look for the Japanese free paper/magazine for local Japanese.

Queued &  paid.
Wrapped the natto well as I had  a long way to go.
Forgotten to take photograph of the natto.
But same as the one I bought last time.

There are the Santander bikes for rent outside Japan House.
But I am not sure there is dock for them near Tottenham Court Road or not.
So I skipped that.

Found my way with Google map back to Tottenham Court Road on foot.
Walked through part of China Town.

No time to shop for the other stuff I need.
(This time I just very quickly grabbed
1 soft sweet flat sphere form of snack
with peanut, desicated coconut
花生糯米糍from a bakery.)

Walked passed famous Foyle Book Shop.
(see the map in previous blog entry)

Arrived in time.
Enjoyed my sushi on coach.

The coach started the return journey at 17:25. Traffic jam.

Sun set photo taken during the loo stop.

I got off the coach at 20:34.

Thanks for the day, dear God.

lazy healthy fast food veg fruit smoothies

Not beer. Nutritious. Great for busy city life. Very fast. Quick to be prepared. Fat free. Help to slim.

Fast.
Just put in powerful blender
for less than 30 to 40 seconds.

Seeded grapes🍇,
sweet bell pepper,
1 mixed leaves salad bowl (which has cherry tomato, onion rings)
 extra herbs,
 celery,
 lentil shoots,
filtered water.
Ginger is optional.

🍷enjoy slowly😄 Nutritious👍❤

Good for you & your loved ones.

Then, the water you use to
rinse the blender & glass ...
keep & use for your plant.
Nutritious.

⁉❓❔Why is it better?❔❓⁉

Usually people put in too many sauces, seasoning & oil in salad.
Juicing removed the dietary fibre.

Fruit veg smoothies make life simple & healthy😄

Bread-cake steam experiment1

Alternative brown bread-cake.
 Very low / nearly gluten-free.

Steam bread/cake.

(ℹIt is known that average commercially produced white bread made with white flour is bad for even wild games in ponds. White sugar is also notorious. Hence, I'm exploring, experimenting & sharing different flours & methods.)

Winter.

ℹIngredients:

💦Warm water.
53 to 65% of the amount of flour, please adjust.
🔴100g rye flour low gluten; organic (Bacheldre Watermill).
🔴100g gluten-free brown bread flour.
(Dover Flour Mills)
🔴20g (high protein) gluten-free coconut  flour organic
 (Tiana)
🔵30g  demerara sugar or better.
💥30g  yeast.

No additives.
Minimum pesticides & herbicides.
No artificial colouring.
No artifical flavour.

A little bit of good oil for surface and barrier.

Methods:

1, in a bowl, add sugar & yeast into warm water.
2, add flour.
3, mix, knead.
4, cover & wait.
5, knead, fold, form/shape and optional variations of colours & ingrediets
6, oil on surface, wait.
7, steam with steamer.
(due to my use of glass, I steam a little longer about 25 minutes. Could be less without the secondary containers.)

-- Many options:
● oriental bamboo steamer over saucepan or pot of water;
● Stainless steel steamer with water.
● other bread machines but result will be different.

-- Options for minimising sticking to the steamer:
☆ oriental paper for steaming,
☆ in oiled containers.
☆ paper cups for cup-cakes.
☆ other methods.

Serve while hot.

Result & reflections of this experiment:

Like a fusion or a cross between Western bread, cake, Oriental steam cake.

Steaming method was supposed to be healthier.

Due to Winter temperature & low protein low gluten flour, I put in more yeast. Longer time, too.
From start to putting inside steamer I allowed 1 hour.

Flour...
it is better to minimise wheat and gluten.

I saw original recipes mostly use  flour with mid-range level of protein. I added a little high protein flour to the low protein ones.

Flavour?
Plain.
Next time I can add different things like cocoa powder, green tea powder, almond powder, mixed grains, vanilla, chopped nuts, etc

Presentation:

Reasonably soft and moist.

Ok - if it is just for oneself.
For better presentation,
better consider buying :

special paper for steaming at the bottom of the bread/ steam,
 or,
 cup-cake paper cups,
 or baking paper.

Personally I checked the materials of most baking paper , and or parchment paper, have synthetic resin. Not keen on them. I try to avoid all moulds and utentils with artificial resins, plastic, pvc, etc.
(avoid endocrine disruprive chemicals)

I did not knead much.
It is Winter❄- I tried to keep my hands clean & dry.
I did fold & roll a few times.

The part that raised above the glass containers is good and better than inside the glass containers.  Next time I will use other methods.
The answers I needed obtained.
